This Pistachio Cranberry Bark is proof that simple can still feel special. It’s rich, lightly sweet, festive, and made with just a handful of real ingredients, the kind you can actually recognize and feel good about serving.

If you’re craving something chocolatey during the holidays but don’t want the sugar crash that usually follows, this is an easy win.

  • Dark chocolate (70%+) for rich flavor and antioxidants

  • Coconut oil for a smooth, glossy finish

  • Pistachios & cranberries for crunch, color, and natural sweetness

Unjunked Pistachio Cranberry Bark Recipe

Ingredients

  • 1 cup dark chocolate chips (at least 70%)

  • 1 tbsp coconut oil

  • Chopped pistachios

  • Dried cranberries (or pomegranate seeds)

Optional toppings:
Shredded coconut, almonds, cashews, dried cherries, use what you love.

Instructions

  1. Melt the dark chocolate and coconut oil together in the microwave, stirring every 30 seconds until smooth.

  2. Spread the melted chocolate onto a parchment-lined baking sheet.

  3. Sprinkle pistachios, cranberries, and any optional toppings evenly over the top.

  4. Chill until firm, then break into pieces.

Store in the fridge for a firmer snap, or at room temperature if your kitchen is cool.
