Day 10 of 12 Days of Unjunked Holiday Treats: Pistachio Cranberry Bark
Some of the best holiday treats don’t require a mixer, a rolling pin, or even an oven.
This Pistachio Cranberry Bark is proof that simple can still feel special. It’s rich, lightly sweet, festive, and made with just a handful of real ingredients, the kind you can actually recognize and feel good about serving.
If you’re craving something chocolatey during the holidays but don’t want the sugar crash that usually follows, this is an easy win.
This recipe is Day 10 of my 12 Days of Unjunked Holiday Treats, a series focused on keeping holiday flavors you love while skipping the ultra-processed extras that leave you feeling sluggish.
Most store-bought chocolate bark is loaded with:
Added sugars
Soybean oil
Artificial flavors
Fillers and waxy coatings
This version keeps it simple:
Dark chocolate (70%+) for rich flavor and antioxidants
Coconut oil for a smooth, glossy finish
Pistachios & cranberries for crunch, color, and natural sweetness
It satisfies quickly, which means you don’t need much to feel content.
Ingredients
1 cup dark chocolate chips (at least 70%)
1 tbsp coconut oil
Chopped pistachios
Dried cranberries (or pomegranate seeds)
Optional toppings:
Shredded coconut, almonds, cashews, dried cherries, use what you love.
Instructions
Melt the dark chocolate and coconut oil together in the microwave, stirring every 30 seconds until smooth.
Spread the melted chocolate onto a parchment-lined baking sheet.
Sprinkle pistachios, cranberries, and any optional toppings evenly over the top.
Chill until firm, then break into pieces.
Store in the fridge for a firmer snap, or at room temperature if your kitchen is cool.
Swap cranberries for pomegranate seeds for a fresh, bright bite
Use chopped nuts your kids already love
Keep a batch in the fridge for quick holiday hosting or gifting
This bark also makes an easy addition to cookie trays without adding extra baking stress.
