Unjunked Oatmeal Butterscotchies Recipe

Ingredients

  • 1 cup almond butter (or other nut butter)

  • ½ cup maple syrup

  • 2 eggs

  • 1 tsp vanilla extract

  • ½ tsp cinnamon

  • ½ tsp baking powder

  • ¼ tsp salt

  • 1 ¼ cups oats

  • ½ cup butterscotch chips

Instructions

  1. Preheat oven to 350°F (175°C).

  2. In a large bowl, mix almond butter, maple syrup, eggs, vanilla, cinnamon, baking powder, and salt until smooth.

  3. Stir in oats and butterscotch chips.

  4. Scoop dough into balls and place on a lined baking sheet. Flatten gently with a fork.

  5. Bake for 10–12 minutes, until set but still soft.

  6. Cool slightly before serving.
