These No-Bake Dark Chocolate Coconut Cookies are rich, chocolatey, and deeply satisfying, without refined sugar, flour, or baking required. They come together quickly, set up in the fridge, and taste like something you’d expect from a fancy holiday tin.

Ingredients
1 cup unsweetened coconut
½ cup oats
5 oz dark chocolate, melted
1 tsp vanilla
⅛ tsp sea salt
Instructions
Melt the dark chocolate chips and coconut oil together until smooth.
Stir in shredded coconut, sweetener, and a pinch of sea salt.
Spoon small mounds onto parchment paper.
Chill until firm.
Enjoy straight from the fridge or let soften slightly before serving.
