4 ripe bananas, mashed
2 eggs
1/2 cup maple syrup or honey
1/2 cup melted coconut oil or butter
1 cup whole wheat flour
1/2 cup all-purpose flour
1/2 cup oats
1 tsp baking soda
1 tsp baking powder
Dash of salt
Optional peanut butter drizzle
1/4 cup natural peanut butter
1 tbsp maple syrup
Chopped nuts for topping (optional)

Instructions
Preheat oven to 350°F. Grease a Bundt or loaf pan and set aside.
In a large bowl, mix together the mashed bananas, eggs, maple syrup or honey, and melted coconut oil or butter until well combined.
In a separate bowl, stir together the whole wheat flour, all-purpose flour, oats, baking soda, baking powder, and salt.
Add the dry ingredients into the wet ingredients and stir until just combined. Do not overmix.
Pour the batter into the prepared pan and bake for about 45 minutes, or until a toothpick inserted in the center comes out clean.
Allow the cake to cool completely before adding the drizzle.
For the drizzle: warm peanut butter and maple syrup slightly, stir together, and drizzle over the cooled cake. Top with chopped nuts if desired.

Slice the cooled cake and freeze individual pieces in a zip-lock bag. Pull out a slice the night before and it's ready by morning — perfect for busy school weeks.
