Egg Roll in a Bowl: The 20-Minute Dinner That Saves Busy Weeknights

Some nights you have all the motivation in the world to cook. Other nights it's 5:00pm, everyone is hungry, the kitchen is a mess, and dinner needs to happen fast.

That's exactly why this Egg Roll in a Bowl has become a staple in our house.

It has all the flavor of your favorite takeout egg roll, without the deep frying, complicated ingredients, or extra work. It's packed with protein and vegetables, comes together in one pan, and makes fantastic leftovers for lunch the next day.

If you're trying to feed your family more homemade meals without spending hours in the kitchen, this one deserves a spot in your rotation.

Why this recipe works for busy weeknights

As a busy parent, there are a few things worth looking for when planning meals: quick to make, simple ingredients, vegetables nobody complains about, budget-friendly, and enough for leftovers. This recipe checks every box.

The bagged coleslaw mix does most of the vegetable prep for you. The ground turkey cooks quickly and adds roughly 25 grams of protein per serving. And the homemade sauce brings real flavor using ingredients you likely already have on hand.

It feels different from the usual taco night or spaghetti, but it's still just as easy.

Main ingredients
1 cup rice
1 Tbsp olive oil
1 lb lean ground turkey (or beef)
1 yellow onion, diced
1 bag coleslaw mix
3 cloves garlic, minced
Fresh ginger, grated
Salt and pepper, to taste
Sauce
2 Tbsp soy sauce (lower sodium)
1 Tbsp honey
2 tsp rice vinegar
1 tsp sesame oil
Optional toppings
Sliced green onions
Sesame seeds
Sriracha or red pepper flakes

Instructions
Cook rice according to package directions.
In a small bowl, mix together the soy sauce, honey, rice vinegar, sesame oil, salt, and pepper.
Heat olive oil in a large pan over medium-high heat.
Add ground turkey and onion. Cook until the turkey is fully cooked and onions are translucent.
Add garlic and ginger and sauté for about 1 minute.
Reduce heat to medium-low and pour in the sauce. Stir until well combined.
Add the coleslaw mix. Stir and cook until the vegetables soften, about 3-4 minutes.
Add the cooked rice and stir until evenly mixed.
Serve topped with green onions and sesame seeds, if desired.
Lower carb tip
Skip the rice entirely, or swap in cauliflower rice for a lighter version with the same flavor.
Meal prep tip
Double the batch and portion into containers for lunches. It reheats well and tastes even better the next day.

Healthy eating doesn't have to be complicated

One of the biggest mistakes families make is believing healthy meals need to be complicated. They don't. Some of the healthiest meals are the simplest ones.

Using convenience foods strategically, pre-shredded coleslaw, frozen vegetables, rotisserie chicken, or pre-cooked rice, can help you get nutritious meals on the table faster. The goal isn't perfection. The goal is feeding your family well without burning yourself out.

Easy ways to customize it

This recipe is flexible enough to fit whatever your family needs that week.

For a lower carb option, skip the rice or serve it over cauliflower rice. Use whatever protein you have on hand: ground beef, chicken, turkey, or leftover shredded chicken all work well. Add more vegetables like mushrooms, bell peppers, broccoli, or snap peas if you want to stretch it further. For extra protein, add scrambled eggs or an additional pound of meat. And if your family likes heat, a drizzle of sriracha or a sprinkle of red pepper flakes goes a long way.
