Who says pizza night has to mean greasy takeout boxes and food comas?

Whether you’re sneaking more veggies into your family’s meals or looking for a lighter take on a weeknight favorite, this recipe proves you don’t need to give up pizza to eat healthy.
½ cup tomato sauce (look for no-sugar-added)
½–1 cup shredded mozzarella
Veggie toppings (bell peppers, mushrooms, spinach, onions, etc.)
Nitrate-free pepperoni or grilled chicken (optional)
Prep the cauliflower: Preheat oven to 425°F. Line a baking sheet with parchment paper. Chop cauliflower into florets and pulse in a food processor until it resembles rice.
Steam and drain: Microwave or steam the riced cauliflower for 5–6 minutes until soft. Let it cool slightly, then place in a clean towel and squeeze out as much liquid as possible. (This step makes all the difference for a crispy crust!)
Mix it up: In a bowl, combine cauliflower, egg, mozzarella, Parmesan, seasoning, salt, and garlic powder. Mix well to form a dough.
Form the crust: Spread the mixture into a ¼-inch-thick circle on your parchment-lined pan.
Bake: Bake for 20–25 minutes until golden and firm.
Top and bake again: Add sauce, cheese, and your favorite toppings. Return to oven for 5–7 minutes until bubbly and delicious.
Swap store-bought sauces and meats for cleaner versions. Look for short ingredient lists, no added sugars, and no seed oils. Or make your own simple tomato sauce with crushed tomatoes, olive oil, garlic, and herbs!
Serve alongside a simple side salad or roasted veggies for a balanced dinner that satisfies both your cravings and your nutrition goals.
