Unjunked Apple Crisp Recipe

Ingredients

For the filling:

  • 4 apples – sliced thinly

  • ½ cup water

  • 1 Tbsp cinnamon

For the topping:

  • 1 cup oats

  • ¼ cup almond flour

  • ¼ cup coconut flour

  • 1 tsp cinnamon

  • ¼ cup melted coconut oil

  • ¼ cup maple syrup

Optional: ¼ cup pecans, chopped

Instructions

  • Cook the apples:

    • Place sliced apples in a frying pan with ½ cup of water and 1 Tbsp cinnamon.

    • Cook over medium heat until the apples are tender, adding a splash more water if needed.

  • Make the topping:

    • In a bowl, mix oats, almond flour, coconut flour, and cinnamon.

    • Stir in melted coconut oil and maple syrup until crumbly.

  • Assemble:

    • Spread apples evenly in a greased 9x9 cake pan or tart pan.

    • Sprinkle pecans over apples.

    • Top with the oat mixture.

  • Bake:

    • Bake at 350°F for 20 minutes, until golden and bubbly.

  • Serve:

    • Enjoy warm on its own, or top with a scoop of vanilla Greek yogurt or coconut cream for a healthy twist on classic apple crisp à la mode.
